ที่อั้งโล่ เราทำไข่เค็มกันเอง เริ่มจากนำไข่แดงสดไปบ่มกับเกลือและน้ำตาลเล็กน้อยเป็นเวลาหลายชั่วโมง เกลือจะค่อย ๆ ดึงความชื้นออกจากไข่แดง จนได้เนื้อสัมผัสที่แน่น มัน และเข้มข้น จากนั้นเรานำไปตากแดดเพื่อดึงรสชาติให้ออกมาชัดยิ่งขึ้น

ถ้าแวะมาที่ร้าน อย่าลืมลองชิมไข่เค็มโฮมเมดของเราได้ในเมนู ‘ปูนิ่มไข่เค็ม’ 🥚🦀

At Aunglo, we make our salted eggs in-house, starting with fresh egg yolks cured in salt and a little sugar for hours. The salt slowly pulls out the moisture, giving the yolks their rich, firm texture. After that, we sun-dry them to bring out even more flavor.

'ยำส้มโอ' เป็นหนึ่งในไม่กี่เมนูที่เราทำขายตั้งแต่วันแรก' และยังไม่เคยเอาออกจากเมนูเลย เพราะมีครั้งนึงเราเคยลองเอาออกจากเมนูไปไม่นาน แล้วโดนลูกค้าหลายท่านทักท้วงอย่างหนักหน่วง จนเราต้องนำกลับเข้ามาอยู่ในเมนูอีกครั้ง เรายังเคยคุยกันเล่นๆ ว่า "นี่สินะ เมนูที่ไม่สามารถแตะต้องได้" 😂

ส่วนเหตุผลที่เคยคิดหักหลังเมนูนี้ เพราะมันเป็นเมนูที่ดูจะไม่มีอะไร แต่ต้องการความเอาใจใส่มากสุดๆ ทั้งน้ำพริกเผาที่เราตั้งใจทำขึ้นมาเพื่อเมนูนี้โดยเฉพาะ กุ้งที่ต้องเป็นไซส์นี้เท่านั้นถึงจะลงตัว และที่สำคัญเราตั้งใจเลือกส้มโอรสชาติหวานอมเปรี้ยว และไม่ติดขมที่ต้องมาจากสวนนี้ที่อัมพวาเท่านั้น ส่วนตัวโฟมกะทิที่ราดมาด้านบน ยอมรับตรงๆ ว่าเชฟแค่ติดแกลมอยากให้ดูไฮโซเฉยๆ ครับ 🤣

สำหรับใครที่ไม่ชอบทานผลไม้ นี่เป็นเมนูที่เชฟตั้งใจว่ามันจะสามารถทำให้คุณลองเปิดใจ และหลงรักผลไม้ โดยเฉพาะอย่างยิ่งผลไม้ที่หลายคนมองข้ามอย่าง 'ส้มโอ' 🍐

"ต้มโคล้งปลาท้องถิ่น"

ปลาสดจากชาวประมงพื้นบ้านในเกาะหลีเป๊ะ มีให้เลือกทั้งปลาอินทรีย์เนื้อขาวแน่น กับปลากระมงพร้าวเนื้อนุ่มฟู นำไปย่างด้วยเตาถ่าน เสิร์ฟพร้อมเห็ดนางรมและมะเขือส้มย่าง เพิ่มรสชาติให้ซุปต้มโคล้งเข้มข้น กลมกล่อม ทานคู่กันแล้วเข้ากันเป็นอย่างดี

"Tom Klong soup with grilled local fish"

Fresh fish sourced from local fishermen on Koh Lipe, with a choice of tender giant trevally or flaky, naturally sweet king mackerel. Grilled over charcoal for a smoky aroma and served with grilled oyster mushrooms and wild tomatoes. Perfectly complemented by Tom Klong soup, crafted from sun-dried fish and aromatic Thai herbs.
