raise your hand if you love a great toast? this little baby here has a great layer of almond butter then it’s topped with fresh banana, fresh Ontario strawberries, chia seeds and h**p seeds. Not only is almond butter super yummy but It contains nearly three times as much vitamin E, twice as much iron, and seven times more calcium than peanut butter.

As an antioxidant, vitamin E helps stop the development of plaque in your arteries, which can narrow them and eventually cause a heart attack. Calcium supports the health of your bones, and iron is essential for your red blood cells.

Peanut butter isn’t necessarily lacking in vitamins and minerals. It has plenty of vitamin E, calcium, and iron, too. It just doesn’t have quite as much as almond butter. Both peanut butter and almond butter contain a healthy dose of potassium, biotin, magnesium, and zinc.

back on Koh Tao, this was our number one seller: the famous watermelon poké bowl! on a bed of garlic fried brown rice, the main ingredient is the marinated watermelon. the marinate is an umami forward dressing with soy sauce, nori, miso, lime, sesame oil, garlic and ginger. chop the watermelon up into chunks and let it marinate for at least 6 hours or overnight, to achieve the soft tuna-like texture. add marinated watermelon to brown rice, chopped cucumber, toasted cashews, pickled ginger, avocado, green onion, black sesame seeds and top with homemade passionfruit-miso dressing. and voila! you have the best selling item of 2019 at delish plant based kitchen Koh Tao! I’ve really been feeling these lavender soy iced lattes lately! They’re super easy to make too. I used my lavender simple syrup I made for a couple cocktails a few weeks back and I mix the syrup with the soy milk, take my trusty milk foamer and mix it up. Poor the cold coffee over ice and mix your milk in. Scoop the frothed milk on top and garnish with lavender flowers. Enjoy! 💜💜

I was trying to use up ingredients tonight for dinner. I noticed I had lots of quinoa and a can of chickpeas so it was a “meatball” kinda night! The quinoa + chickpea balls are made with shallots, garlic, parsley, rosemary, thyme, tarragon and cashew parmesan. pair that with homemade tomato sauce and some fresh spaghetti and you’ve got a perfect, nutritious, delicious dinner! 🍝

it’s Friday and I felt like ice cream but it was only 9am so what’s the next best thing? a smoothie bowl! this one is made with 3 frozen bananas, soy milk, maple syrup, coconut coconut an blue spirulina. I topped them off with strawberry, pineapple, mango, blueberry, banana crunch granola, chia seeds and lilacs. it really hit the ice cream spot and is full of so many great nutrients! I always thought smoothie bowls were so complicated and that you needed all this fancy equipment but nah! my Ninja blender works great and just be careful with the liquid content! who’s making these all quarantine-summer long? 🙋🏼‍♀️🙋🏼‍♀️🙋🏼‍♀️

this version is made with ground chia seeds, soy milk, cinnamon, nutmeg, cardamom and vanilla, fried then finished with vegan butter, maple syrup and powdered sugar. vegan French toast is a great breakfast especially if your using chia seeds because they keep you full all day and the fruit gives you energy to tackle your day.

on hot days like these, I love a good cold roll! these babies were inspired by my charcoal cold rolls back in Thailand, where anything cold reigns. today’s version has avocado, mango, kale, pickled cucumber, green beans, crispy tofu strips, grape tomatoes, leeks served with a tahini maple dressing and sprinkled with black roasted sesame seeds. super easy and super delicious! you can use any ingredients you like to make these delicious rolls right at home. 😍🥒🥑

summers finally arrived in Toronto with high’s in the 30’s and sunshine in the forecast. it’s also time for the lilac’s to be in full bloom- and if you know anything about me, I love me some good edible flowers! did you know that lilac’s are edible? they have a light floral taste (obvs) and are great in salads, for baking, making tea, syrups, jams and the list goes on. but remember, lilac’s only bloom for 2 weeks so you gotta move fast when you’re using them for cooking and only use non-sprayed flowers for eating of course.
