Surprise : Thai Leche de Tigre Dry Aged Sashimi

Peru inspired it. Thailand rewrote it. Jannie make it happen😉

This week’s Jannie Creation is a sashimi of dry-aged tuna, kissed by a vibrant Thai Leche de Tigre with Nam Dok Mai mango, Thai basil oil, Sisaket chilli flakes, pickled ginger and a little touch of caviar.

Just hanging around.

Concentrating flavor.

This batch lost 32% of its weight on the journey. Sounds crazy… but actually that’s better than our previous one.
