For this special evening, Chef Leandro and the team will present a menu built around two exceptional ingredients. In collaboration with Jagota Thailand, suppliers of some of the world’s finest premium ingredients, this dinner will showcase luxurious Black Cod alongside Sandalwood Wagyu by LOTTE, one of Australia’s most respected Wagyu producers.
Raised through an extended grain-feeding programme inspired by Korean Hanwoo techniques, Sandalwood Wagyu is celebrated for its exceptional marbling, buttery texture and deep umami flavour.
For starters, guests will enjoy Black Cod, one of the world’s most prized premium fish, known for its delicate flaky texture, silky finish and rich natural oils. Elegant, refined and incredibly flavourful, it’s a fish celebrated by chefs around the world.
The menu brings together the best of land and sea through a series of specially created dishes, from smoked black cod tacos and miso-glazed cod to charcoal-grilled striploin and 36-hour slow-cooked Wagyu cheek finished with black truffle and Madeira jus.
Guests will choose one starter and one main course, followed by dessert, with the option to enjoy a carefully selected wine pairing experience in collaboration with Wine Garage Co., Ltd.
