A quick word from the team. The first scent of charcoal from the counter. A pour landing just as the next dish is ready. The sound of the kitchen calling, the bar moving, and the room getting louder as the night opens up. It feels close, alive, and a little unpredictable in the best way.

Another plate lands, another moment shared. Flame rises, hands move, and everything happens within reach. The bar pours beside you, the kitchen calls out, and the night builds one plate at a time

Carabineros, served raw and clean, with the kind of sweetness that does not need much noise around it.

At Fuego, it comes with sour cream, saffron apple chutney, kombu emulsion, fried tarragon, and lemon zest. Bright, creamy, briny, and lightly aromatic, each element is there to sharpen the natural depth of the prawn without covering it.

Fire-kissed udon, sweet hamaguri clams, and an AOP-style white wine sauce come together in this Fuego signature.

Japanese thin udon is quickly smoked over fire, giving the noodles a subtle charred aroma that complements the sweet, briny clams. Rich yet refined, each bite is carried by a balance of smoke, salinity, and comfort.
