The legend sais that Ernest Hemingway was hurt on Isonzo Front and he is supposed to be cured in our house. In one of the rooms overlooking the courtyard he was writing his famous novel "Farewell to the arms". But certainly Hiša Franko was a roadside inn, a village mill, a big countryside estate, a hospital during the First World War, a huge agricultural estate and finally Hiša Franko today, which refuses to be a classical hotel or a fine dining restaurant. Hiša Franko is a beautiful countryside house & estate with three generations living in different floors. Behind the house, there is a herb, flower and vegetable garden and next to it you can hear a lively creek, home to our small family of trouts.

Davide has a complex job at Hiša Franko: translating the ideas of our kitchen, the season and the Soča Valley into a glass.

He is the mind and the hands behind our signature cocktails and the non alcoholic creations of the Juicy pairing, working with ingredients gathered, grown, fermented, infused and transformed in house.

It takes research, precision and a very good palate. It also takes endless testing, because getting a drink to hold its own alongside the EUPHOREST menu is no small task.

For decades, Joško Gravner’s wines have had a place at the Hiša Franko table and in our cellar.

His vineyards lie just across the border in Collio, where Slovenia and Friuli meet. Long before amber wines found a new global audience, Gravner looked backwards to move forward, working with indigenous varieties, long skin macerations, and fermentation in buried Georgian amphorae. His approach would go on to influence an entire generation of winemakers.

Among the more than 10,000 bottles in our cellar, we are fortunate to hold some extraordinary examples of his work. This season includes Ribolla 2018, the exceptionally rare Ribolla Riserva 2010, and Rosso Breg, made from Pignolo, a grape once nearly lost to history.

Our cellar has grown through decades of curiosity, friendships and discovery. Joško is part of that history, as a winemaker we deeply admire, a decades-long partner and a dear friend of Hiša Franko.

There is something special about the moments leading up to dinner at Hiša Franko.

In summer, aperitivo moves into the garden, looking out towards the mountains, with a few small bites from the kitchen and a cocktail that speaks of where you are.

Our cocktail list follows the same landscape as our food. Seasonal ingredients, wild plants, herbs and fruit are transformed in house, translating the Soča Valley into liquid form.

The first bite on the Euphorest menu begins with the valley at its freshest:

Seasonal greens and herbs, picked while they are abundant around us, are gathered into a small wrap and served among stones from the Soča River. A veil of mist fills the bowl, recalling the river in the early morning, before the valley fully wakes.

And if one of the stones catches your eye, take it with you. A small piece of the Soča Valley to remember us by.

The past couple of weeks at Hiša Franko have looked a lot like this.

Summer is in full swing and the garden and surrounding meadows are giving us plenty to work with. Flowers everywhere, fruit at its peak, herbs drying for the months ahead and vegetables reaching almost ridiculous proportions. Much of it is finding its way into EUPHOREST.

In between services, we also gathered the team for our annual photo shoot, documenting the people, dishes and details that have defined this year so far.

Long days, warm evenings, a very busy kitchen and one of our favourite times of the year in the Soča Valley. 💚
