Nian Kern Yee Vermicelli (boiled instead of fried) in a savoury, sour and spicy sauce served with hard-boiled egg,

Originally a Thai invention (Siam is the old name for Thailand), the dish Mee Siam has become a Nonya speciality cooked by Malays, Indians and Chinese hawkers here. His version is light, tasty and, best of all, not oily at all. This is because Mr Chew boils the vermicelli, instead of frying it like most hawkers do. The piquant gravy is made from a blend of dried shrimps, tamarind juice, bean paste

, ginger, garlic, onions and lemongrass. The orange gravy was also flavourful – simultaneously spicy, sweet and sour. It is served with the usual dried beancurd, beansprouts and hard-boiled egg. Mr Chew also cooks Mee Rebus, a Malay dish consisting of yellow noodles served with a thick brown gravy and other ingredients such as beancurd, beansprouts and hard-boiled egg. He has been a dedicated Hawker for the past 4 decades, always seeking to improve his food and cooking skills.
