We don’t usually do two Colombian lots at the same time, but these two made sense together.
Las Margaritas goes through 36 hours of oxidation and 80 hours of anaerobic fermentation before a final hot wash locks everything in. Winey, raspberry, warm spice in the finish.
Quebraditas co-ferments with passionfruit yeast and cold-seals the fermentation at 5°C to fix it exactly where they want it. Floral, stone fruits, clean.
Same origin. Same variety. Completely different cups.
