From the cool waters of Miyagi Prefecture comes the blue crab, celebrated in Japan for its sweet, delicate flesh and refined texture. Offers a subtler brininess and a clean, lingering sweetness that chefs prize for seasonal menus.

At Tempura Ensei, the crab is steamed to preserve its natural tenderness, then paired with eggplant and ginger flower. A special crab vinegar sauce completes the dish, enhancing umami while lifting the crab’s sweetness with a gentle acidity.
