It’s time for me to close the doors…
Of Swan Lake Ave, which was my baby,
Who gave me learning, and my making!

My start has been a journey, I’ll never tell a lie,
I made some mistakes; it’s all part of the ride.
It’s time to branch out, and time to unveil
There is more than long legs and an egg chair to regale.

You’ve loved my Scotch Eggs and the Piggy Terrine,
My Big Balls in a Th*****me,
And a Tim Cheese Cake, for the wedding Aston and Celestyn.

To say I’m a bit cheeky is rather allowed

Today in the TBS kitchen, I've given my junior chefs a Mystery Tin challenge! Hilarious! The spectacular is my microphone in the kitchen! They have a tin of Orange, eggs, red chilli, garlic, shallot, bacon and a mars bar! I'll be showing you the winning product! (I've never seen such a nervous group of chef's before!) Let's see how much they have learned in the year of being with me at TBS!

Dear Fleur,

It was a great pleasure to have met you last night and to have dined at The Big Sheila (the first of what I hope will be many dinners!). I had one of the most fantastic, relaxed and interesting dinners I have ever enjoyed in Singapore. The food was absolutely fantastic - there were flashbacks to meals from the past as well as exciting new flavours (particularly the coleslaw on the chicken schnitzel which was incredibly refreshing) - which made the night incredibly special. In addition, you and your colleagues really made Ling and I feel like we were having dinner with good friends which is a rare and welcome experience in Singapore. Both Ling and I will look forward to coming back and everything else on your menu! Especially as the leftovers were absolutely fantastic for lunch today!

RIGHTO – here are some more new dishes for your tummy pleasure! On the board from Brunch tomorrow -
** Eggs Shaka Shuka
- Roasted Red Peppers, harissa and tomatoes baked, with eggs and topped off with parsley and yoghurt!
** Breaky Tower
- a tall stack of Danish Bacon, iceberg lettuce, onion rings and poached egg, with hollandaise sauce on
** Aussie Crab Omelette
- Sweet Crab meat, with capers, aioli, lemon and parsley cooked inside a fluffy omelette!
** Double Chook Burger
- Juicy Chicken pattie with lime, with spiced carrot ribbons, iceberg lettuce, coriander and sour cream, with chicken salt fries!
And who doesn’t need a cheeky Bloody Mary to start the week end in the right way! See you over the week end peeps! TBS xx
