WHAT’S THE POUR? — WALK THIS WAY🍌☕️(WEEK 303)

RICH, BITTER, BOLD

A rich and deep stirred down cocktail that highlights the combo of banana and coffee.

Discarded Banana Peel Rum is part of the Discarded Spirits company which uses waste products from other food and beverage industries and gives them another life. The banana peel rum takes banana peels that are a waste product from a flavour house and infuses them into a blend of Caribbean rums for 2 weeks before being filtered and bottled.

Jack Daniels Old No. 7 is a Tenessee Whiskey that, on its own, has strong notes of banana and caramel. Combining the lighter whiskey with the richer rum helps to enhance the banana flavour in the cocktail without overwhelming the drink with sweetness.

The coffee element to this cocktail comes in through coffee bean infused Campari. Coffee beans are oily and aromatic and by sitting them in Campari, you get a lighter and less bitter coffee flavour that pairs well with the herbal citrusy bitterness of Campari.

To round out the cocktail and add richness, we are using Carpano Antica as the sweet vermouth element in this Boulevardier style cocktail. Carpano Antica is a big, bold vermouth that has the addition of vanilla. The vanilla weaves the whiskey, rum, and coffee together whilst enhancing the sweetness of the drink. To prevent the vermouth from taking over, we add some rhubarb amaro for bitterness and a hint of smoke.

The garnish for this cocktail is a fresh cut piece of pandan that lends a green, grassy aroma for contrast as well as a nutty, coconut like vibe that blends with the Campari.

WHAT’S THE POUR? — STREETSIDE🥕🥒(WEEK 302)

VEGETAL, SOUR, SAVOURY

The flavours of a Vietnamese salad in a glass.
With this drink, the combination of flavours and freshness of ingredients are key to bringing everything together.

To pull all the flavours of Vietnam together in this Smash, there is a balance of vibrancy and green flavours against savoury and pickled.

To bring in the carrot and daikon pickle that you often see on Banh Mi, Hazel has made a simple brine of vinegar, sugar, salt, and water and has lightly pickled slices of carrot and daikon in it. We are using the brine here to add tang, a bit of savoury funk, and sweetness.

Bringing up the savoury factor, Hazel has infused white pepper into London Dry gin. The herbal, bright notes of the gin are going to play well with the basil and cucumber, whilst the white pepper enhances the funk from the pickle brine as well as adding an earthy warmth to the cocktail.

The Thai Basil is shaken directly into the cocktail to preserve its fresh anise-y flavour and vibrant colour. To ensure consistency, the cucumber has been juiced and is added for cooling freshness and a relief from some of the more intense flavours.

The whole drink is balanced with fresh lime juice and a touch of rich simple to bring everything together.

The garnish is a couple of pieces of the carrot and daikon that were used for the pickle brine. Snack on them throughout drinking the cocktail for a pop of acidity and savouriness!
