In France, oranges have long symbolised wealth and good fortune, once so precious trees were grown in 𝘰𝘳𝘢𝘯𝘨𝘦𝘳𝘪𝘦𝘴 like living treasures and integrated into the design of noble estates. And olive trees are emblems of peace, resilience and longevity, their fruit representing a life of abundance and continuity.

This dish quietly weaves together all these shared symbols - prosperity, harmony and a long, blessed life. An auspicious centrepiece with a little French flair.

🐓🇫🇷Poule au Riz - yes, Chicken Rice! A dish cooked in homes across France, each family adding its own small touches, yet the heart of it remains the same: a good chicken, gently poached, its fragrant broth used to cook the rice, and sometimes transformed into a light, comforting sauce. Simple, patient, and profoundly familiar. Sound familiar? Sometimes the things that bring us home are closer than they seem, even on another continent.

Every mother adds a little of her own love - perhaps tomatoes from the garden in the south or a whisper of piment d’Espelette in the southwest for a gentle kick.

We’ve taken a Burgundian turn: Dijon mustard lending a soft tang to a silky velouté, earthy mushrooms and sweet leeks releasing their perfume into the chicken, and rice, buttered and fragrant with fresh dill.
