New on the menu at AIR.

Built around thoughtfully sourced ingredients – from Thai chayote to mushrooms from Mushroom Buddies – and guided by familiar flavours like assam pedas, kicap manis, and satay, reworked with a lighter touch and gentle fermentation techniques.

Featured dishes:
🐟 Ceviche of local mahi mahi with a tangy passionfruit dressing
🌽 Sweet corn ribs from Talula with an irresistable garlic chilli butter
🍄 Crispy Oyster Mushrooms from with satay sauce, whipped tofu and chilli

A hands-on brewing session exploring kombucha as a living drink and a circular practice. Tea, sugar, time, and culture; transforming something simple into something vibrant and alive.

What you’ll experience
• Taste AIR’s house-brewed kombucha and learn the basics of fermentation
• Understand the brewing process, healthy fermentation, and how to adjust flavour
• Brew your own kombucha in small groups and take home your SCOBY

Tropical Noël is our natural-wine and sustainability-themed Christmas celebration with The Amphora Project, featuring a curated tasting of 20 low-intervention, small-batch wines. Including seasonal releases and signature bottles from Central Europe.
