Planning our menus months in advance enables us to give our Urban Farmers ample time to grow the vegetables, herbs and fruit that we need at our Urban Farm.

This exercise also helps our Culinary Team to forecast our food waste, and proactively take steps to manage the wastage. One way is to create recipes that make use of the food trimmings, which would have otherwise been discarded.

For example, our Chefs can prepare quesadillas filled with beef trimmings, a homemade ragù sauce, that is made from stewed beef trimmings, and our watermelon rinds, that are sliced and stir-fried with other vegetables.

These efforts may seem small, but a little goes a long way! Planning our menus in advance helps us to manage our food waste, which is good for the environment, and allows our Chefs to be creative with their recipes too!
