It’s been a long time since I posted, so here goes.
Trotters or Paya.. A yummy meal that touches your soul. I made two varieties, 1 with spices and Kashmiri chillies & the other is a Stew with coconut milk and hence less spicy..

PAYA STEW RECIPE

Paya 4 trotters, cut & cleaned

Heat oil in a pot, add

Cinnamon stick 2 inch
Bay leaf 1 big
Cumin seeds 1/2 teaspoon
Cloves 6 to 8
Peppercorns 8 to 10

Onions thinly cut x 2 big
Ginger/ Garlic / green chilli paste - 2 tbspn

Coconut milk 1 1/2 cup
Garam masala 1/2 tbspn

Add Boiled trotters
Tomatoes 2 medium finely chopped
Cardamom crushed (3 medium pods)
Green chilli slit x 3 ( according to spice level)
Add 6 to 8 fresh curry leaves

Let it all cook together on medium till the Paya takes on the flavours & the oil is released.

Garnish with fried onions.

Add salt to your taste, once trotters are added to the sautéed spice & onion mix.

*Boil trotters in cooker with
turmeric powder - 1/2 tablespoon
Coarsely smashed garlic 3
Bay Leaf 1
Cinnamon stick 1

Prawn and Bacon mini puffs/ pot pies..
this is such a yummy dish that brings the taste & flavour of Goa to your home..

Prawns 500 grams (Cleaned, deveined & chopped)
Bacon bits 100 grams (optional)

Fillo / Phillo pastry 750 grams. (I used a ready sheet)

Onions finely diced x 4 medium sz
Tomatoes finely diced x 3 medium
Chillies chopped x 4 (according to your spice level)
Ginger / Garlic paste - 1 tablespoon
Coriander finely chopped bunch
Turmeric powder - 1 teaspoon
Chilli powder - 1 teaspoon
Garam masala powder - 1 teaspoon
Cumin seeds - 1/2 teaspoon
Lime juice as per your taste
Salt as per taste.
Egg x 1 (For Egg Wash)

Add Cumin seeds to hot oil. Then add Onions sauté till translucent, ginger garlic paste & chillies till fragrant and then add tomatoes, fry for 5 minutes..
Add all the powders and salt and fry till it all mixes well, turn off the heat.
In a separate pan, fry bacon and then add the prawns and cook till it turns pink and turn off heat immediately. (Prawns don’t need to be cooked for more than 2 to 3 minutes or they will turn rubbery)

Add the prawn and bacon mix to the above cooked mixture, add lime juice and coriander.

Take the pastry and cut them to fit in your muffin pan, add the cooled prawn mix and cover with pastry.
Brush the TOP with an egg before it hits the oven.
Cook in oven till the TOP is golden brown.
Remove from oven and cool on a wire rack.

TIPS:
- Cool the mixture before u fill the pastry.
- Grease the muffin pan before you put the fillo pastry base.

NOTE- I used a readymade Fill -o / Phillo Pastry Sheet.

Coconut Macaroons

60 to 72 mini cup cake pieces
Ingredients
* 400g desiccated coconut
* 400g condensed milk
* 1 tsp vanilla extract
* 1/2 cup butter, cubed, room temp
* 1/2 cup brown sugar
* 4 eggs
*
* INSTRUCTIONS:
* Place butter and sugar in a mixing bowl and using a hand mixer cream mixture until light and fluffy.
* Add eggs and condensed milk then mix in medium speed.
* Add the desiccated coconut, mix well until well blended.
* Place in small moulds lined with paper cups then baked in a 180c preheated oven for 20 to 25 minutes or until top turns golden brown.
* Let it cool down before serving.
