Anni Dreams of Biryani was inspired by Bismillah Biryani and Chef Arif.

While writing for the Michelin Guide Singapore, author Namita Moolani Mehra came across Bismillah Biryani Restaurant after we received our first Michelin Bib Gourmand. Curious about the little biryani shop in Little India, she researched the restaurant and Chef Arif, and that eventually inspired Anni Dreams of Biryani, a children’s book dedicated to her daughter, Anya.

Even more special, the character “Uncle Arif” was inspired by Chef Arif himself (although Namita insists he’s much grumpier in the book than in real life 😄).

We feel incredibly honoured to have played a small part in such a beautiful story.

“No dalcha? No curry?” 😅

We see this comment a lot, and we get it, it might not be what you’re used to.

We come in peace but after 20 years of making biryani, we’ve learned that not every biryani has to be served the same way. Chef Boss Arif’s philosophy is simple: if the rice needs dalcha to taste good, then the flavour isn’t in the rice.

Our dum biryani is cooked, in our opinion, the traditional way, with the rice, meat and masala all cooked together so every grain carries flavour. Adding dalcha changes the flavour profile completely, which is why we choose to serve it on its own (though a side of raita is always a good idea 😉).

Of course, taste is personal. It’s okay if we’re not your cup of tea. But if you’ve never tried biryani this way before, don’t you think it’d be fun to try something different?
