The Bluefin Tuna is one of the top luxurious favorite for Sashimi (sliced raw fish), with delectable red meat. The fish consist of 3 different parts:
Otoro (fatty tuna) - This is the most desirable part from the inside of the fish’s belly. The colour is pinkish-white as it contains vibrant white oils lines which is the juiciest and fattiest part from the fish belly. It gives a distinctive and magnificent tastiness, practically melts in your mouth, giving sashimi a sweeter taste.
Chutoro (medium fatty tuna) - The moderately fatty portion which is at the conjunction between Otoro and Akami. A popular piece that you can enjoy the buttery flavor. It is often preferred because it provides both a meaty and a fatty texture for a real celebration in your mouth.
Akami (lean tuna) - This is the leaner meat from the sides of the fish and is meaty and red, found most often atop rice in Sashimi or in a sushi roll. Because this is also the main part of a tuna fish, it is much more readily available than Chutoro or Otoro. It is described to have a bolder taste profile.
