Iced Filters - The Decent Way

Brewing over ice has always presented a challenge when trying to balance dilution, extraction, and workflow. However, we've begun turning our Decents into no-bypass brewing machines over the past week.

By using a paper filter sandwich in a deep, high flow portafilter basket, we're able to achieve higher extractions at tight ratios that stand up better to dilution, all while maintaining the clarity that we want from an iced filter.

The results are extremely consistent, and a step up from the regular way that ice filters are typically done. Come on by to taste the difference!

Our top pick on the current lineup is a spectacularly processed yellow bourbon lot from Mang Tempayan .

Complex and process-driven, this lot boasts prominent notes of lemon, passionfruit, and osmanthus - all while being incredibly clean and refined.

Project Lucent is an limited series of very light roasted coffees that we've spent the past few months refining and perfecting - and we're excited to share them with you! In this showcase, you'll get to taste an exclusive course of 3 filters and an espresso across different origins.

Very light roasts are trickly to nail, but by carefully staging our heat application, we're achieving well rounded development of our coffees even at much lighter roast colours, resulting in a transparent expression of terroir and expressive, sparkling flavours.

P.S. We'll also be retailing small amounts of these coffees only at the sessions, so don't miss out!

The third quarter typically heralds the arrival of the latest harvest from Ethiopia, and we've got our hands on some delightful lots that are absolute flavour bombs. Whether it is a pristine washed or an anaerobic natural berry bomb, these lots stand out for being expressive and true to that Ethiopian terroir that we can't get enough of.

We're slowly releasing these lots over the next couple of weeks, so keep an eye out for them!

We're really excited to feature three outstanding lots from , each distinctly unique and incredibly expressive.

Finca Villarazo's Washed Pink Bourbon is vibrant, floral, and heavily reminiscent of a Kenyan coffee with jammy dark fruits.

Villa Betulia's Natural Java bursts with kyoho grape and blackcurrant, showcasing a good complexity without heavy fermented flavours dominating the cup.

Jardines Del Eden's Natural SL28 easily takes the top spot as one of the sweetest Colombians we've had. Dense and layered, this is a unique and remarkable expression of the SL28 variety.

We're opening a small handful of slots for a roasting workshop, running from late may to june. The workshop features a weekly 2 hour session over the course of 3 weeks, with both theory and take home practical homework, coupled with feedback and discussions.

If you're a home roaster or a cafe looking to begin a roasting programme, this workshop will equip you with the principles and structures necessary to express your vision of coffee through roasting.

We're serving up a very special lineup of coffees that are just absolute flavour bombs, showcasing the innovation and diversity of these renowned Colombian producers.

Good processing elevates flavour, increases complexity, and improves structure, and here at Zerah, we believe that great coffees need not be categorically boxed in by the terroir police. (But of course, we still loved our clean, washed coffees and will also be serving them on the menu this weekend.)

Retail bags of these gems are also available at our coffee bar for a limited period.
