Featured on 𝗦𝗲𝗮𝘀𝗼𝗻𝘀 𝗼𝗳 𝗔𝗼𝗺𝗼𝗿𝗶, the 𝗦𝗵𝗶𝗿𝗼𝗯𝘂𝘁𝗮 𝗬𝗮𝗸𝗶 𝘄𝗶𝘁𝗵 𝗕𝗹𝘂𝗲𝗯𝗲𝗿𝗿𝘆 𝗦𝗮𝘂𝗰𝗲 draws inspiration from a prefecture known for its orchards and produce.

Sourced directly from Japan, Shirobuta, or "white pork", is prized for its tenderness and rich flavour. Here, it is paired with a blueberry-based sauce that brings a subtle fruitiness to the dish, creating a balance between savoury and sweet.

Aomori is often celebrated for its cold-water seafood, but its orchards are just as much a part of the region’s identity.

As part of our seasonal menu 𝙎𝙚𝙖𝙨𝙤𝙣𝙨 𝙤𝙛 𝘼𝙤𝙢𝙤𝙧𝙞, our desserts take a sweeter look at northern Japan, from apple-infused warabi mochi dusted with cinnamon sugar to warm taiyaki paired with matcha ice cream.
