When Ian was running a restaurant near Uncle Paul’s stall at Dickson Road, an unexpected friendship began.

Uncle Paul had spent his whole life making Hainan Chicken Rice Balls. When he needed to close for health reasons, he didn’t want his mother’s legacy to disappear, so he chose to pass it on.

He chose to share it with Ian who learned the method, technique, and the tradition behind it. Every rice ball, every piece of chicken, every chili. All done the traditional way. No shortcuts.

Today, we continue making Hainan Chicken Rice Balls with the same respect.

Our Hainan Chicken Rice Balls began with “Uncle Paul,” as he was known, who ran a humble Hainan Chicken Rice Ball stall at Dickson Road, using his mother’s recipe that dates back to the 1940s.

For years, customers returned for the same reason: Tradition. Technique. True flavour.
