It is with a full heart that I share this news.

Sage will close its doors on March 15th, 2026.

Over the years, this kitchen has been my world — a place where every plate carried a little piece of who I am. To every guest who sat at our table, who trusted me with your evening, your celebrations, your quiet moments: thank you. Truly. You are the reason this place meant something.

To our suppliers, our team, and everyone who believed in what we were building here — your support has meant more than words can say.

This is not an ending. I am returning to Japan, carrying everything I have learned, everything I have felt in this kitchen. A new chapter is waiting — quieter, more intimate, and deeply personal.

I hope our paths will cross again, at a table somewhere.

A quiet winter comfort at Sage, available only for a limited time.
This hotpot-focused dinner is built around deep, elegant broths, Japanese citrus, and a balance of richness and freshness that defines our winter menu.

At Sage, our cuisine is shaped by three quiet foundations —
the depth of Japanese fermentation,
the memories of our childhood landscapes,
and a sense of stillness that lives in every dish.

For guests who prefer not to drink alcohol,
we now offer a selection of Japanese non-alcoholic craft beverages,
including forest botanical soda, sparkling Japanese tea,
and still herbal tea from Miyazaki.

These drinks pair gently with our food,
and reflect the same philosophy that guides our cuisine.

Late-Night Dining Update
From this month, Sage will no longer open for regular late-night dining after 10:30pm.
Since COVID, we have felt a gentle shift in Singapore’s dining habits, with fewer guests choosing to dine late at night.
To preserve the quiet atmosphere and the level of preparation required for our dinner service, we will focus our energy on daytime work, menu development, and the omakase experience.

Thank you always for your understanding and warm support.
We may hold occasional late-night sake sessions as special one-night events.
Please keep an eye on our stories.

A small update from Sage.
To focus even more on the quality of our preparation and the quiet experience we want to create at the counter,
we will be shifting to five dinner-service days each week (Wed–Sun).

Tuesday will become our preparation and development day,
but we remain happy to open for groups of 4 to 8 guests with advance reservation.

This allows us to keep our attention on what matters most —
steady quality, a calm rhythm in the kitchen, and meaningful pairings built around Japanese sake.

As Singapore’s interest in sake continues to grow,
we will also be gradually strengthening our bottle sake offerings,
focusing on curation, storytelling, and value — rather than discounts or promotions.

We have a very important announcement to make.

For a long time now, I have been feeling a sense of bewilderment and frustration.
This is because we have always had in mind the idea of introducing quality Japanese products to Singapore through our restaurant business. However, the only alcoholic beverages on the list are French wines. This is contrary to my belief...
In addition, since the Corona pandemic, wine purchasing prices have almost doubled, making it very difficult to find wines that are worth the price. The mindset of the Singaporean customer has also changed, with wine lovers buying their favorite wines themselves and either bringing them to restaurants or enjoying them at home with friends. I feel that people's tastes are changing to how they can enjoy wine at a reasonable price. To the delight of the Japanese, interest in sake is very high and the demand for sake is increasing every year. However, it is also true that the selection of sake in restaurants is still limited.
Therefore, we at Sage have decided to focus our alcoholic beverage menu on sake as our future direction. We will complete the beverage menu by the end of this month and gradually move forward with purchasing. We will continue to sell bottles of wine at the same time, as long as we have enough wine in stock. Please understand that we do not want to neglect our wine-loving customers. Please let us know at the time of reservation what wines you prefer and we will do our best to prepare them for you. We will continue to offer by-the-glass wines and champagnes, as well as wine pairings, even after we specialize in sake. Basically, we do not have a list of so-called dry sake. Please note that we will leave the dry sake to Japanese restaurants or sushi restaurants. In addition we ask for your understanding that the corkage fee will be slightly increased.

We've also started selling brown sugar shochu by the glass. We'll offer it as an after-dinner drink to customers who order the pairing menu. Please ask, "Do you have shochu?"

① Sparkling Japanese sake Hououbiden wine cell sparkling... A well-known Tochigi Prefecture specialty, this sparkling Japanese sake is brewed with wine yeast. Enjoy the sweet aroma and freshness of melon, this dignified sake brewed by a female master brewer.
② Dominique Portet Sauvignon Blanc 2023... The freshness and minerality of biting into grapefruit bring out the flavor of fresh fish.
③ Hubert Lamy Saint Aubin 1er Cru Les Frionnes 2021... A wine from one of Saint Aubin's top producers. A wonderful Chardonnay wine evoking minerality, lemon candy, and a perfect pairing with sea urchin and conger eel.
④Lucien Le Moine Mazis Chambertin Grand Cru 2013... Only one barrel of the same brand is aged each year. Of course, only 288 bottles of this vintage are produced worldwide. The nuances of forest mushrooms and ci**rs that come with aging blend beautifully with the fruitiness.

Introducing our "Free Flow Sake" starting this month. 1. Zaku Impression G...Zaku's premium line, needless to say. Simply delicious, juicy, and astringent, this sake will have you coming back for more. 2. Sansyoraku Yamahai Junmai...From a small sake brewery in Toyama, you wouldn't guess it from the label, but the taste is banana and grapefruit. The finish is overflowing with the umami of rice. It's the perfect match for our restaurant's sukiyaki. 3. Koueigiku Tasogare Orange...Unfiltered unpasteurized sake, with the aroma of mandarin orange, very rare for sake, spreading throughout the mouth. It's like orange juice for adults. 4. Odayaka Junmai Ginjo Usunigori...A slightly cloudy sparkling sake. With notes of white fruit like peach and melon, and the acidity and yogurt flavor typical of the kimoto brewing method.
