Sujiko (筋子) vs Ikura (いくら) - Can you tell the difference?🤔

Both are a form of salmon roe, but sujiko has an intense reddish color while ikura is usually a lighter shade of red with a tint of orange.

Sujiko comes intact within the egg sac and is sweeter in taste, which is why it's sometimes preferred over ikura. While ikura is usually pickled in soy sauce, sujiko is often brined to prevent its shape from collapsing.
