Jayce founded SGBrisketKitchen in Singapore in 2021 and is a dedicated BBQ expert with a diverse background. She started smoking m

eats in 2019 and eventually had no choice but to start the business because her family and friends were tired of her feeding them smoked meats every weekend! After more than 15 years in oil and gas, she made the switch to become a full-time smoker and pioneered the technique of smoking briskets for more than 20 hours. She also introduced vacuum packed sliced briskets for quick and easy reheating without drying out the meat. As the first Singaporean to smoke a full blood A4 Kagoshima Wagyu brisket, she continued to sharpen her skills in 2024 by visiting top Texas BBQ spots like Snow’s BBQ, Franklin BBQ, and Terry Black’s BBQ. Her work has been featured in 8 Days, Her World, Nu You, Seth Lui, Class 95 and more. Jayce also gives motivational talks to youths and girls in Singapore, sharing her journey and encouraging them to chase their dreams.

WHY IS OUR HAY-SMOKED CHICKEN SKIN SO CHEWY…. YET SO JUICY?? 😋 💦

Because we SMOKE “low and slow”, NOT GRILL “hot and fast”.

Chicken skin becomes crispy only when the temperature is high enough to render and dry the fat under the skin.

In “low and slow” smoking:
🔥 The fat renders slowly for over 6 hours
🔥 The skin never gets hot enough to crisp up
🔥 Moist smoke environment keeps the meat incredibly juicy

So the result is:

Smoky flavour + juicy meat + slightly chewy skin.

That is actually very normal for traditional smoked chicken, and not direct grilling.

This is actually the first time in my life that I am working through the full CNY season. Growing up, it always felt like such a big family event!

As we get older and after saying goodbye to people we love along the way, I think I see it a little differently now. Sometimes the simplest moments together are the most precious..

So wherever you are, whether you are feasting (hopefully on our smoked meats!), visiting, resting or even working… I hope you treasure all the random conversations, TV time, and simply their presence. 🥰

Thank you for giving me the chance to FINALLY roll out my private and communal dining concepts this January 2026. It was honestly SO much fun and such an unforgettable experience.

Especially when familiar faces that NONE of us expected suddenly walked through the doors. So many “OMG what are you doing here?!” exchanges! 😂

Core memories unlocked. 🥹✨

I truly cannot thank my family and friends enough for all the help with food and manpower. Especially Aunty Jen. I think you guys all know her very well now. 😂

Aunty Jen () was EVERYWHERE. Helping to prep the sides, serving, washing dishes, and quietly holding everything (and me) together behind the scenes. I honestly could not have done this without her. ❤️

And of course, !! For taking time off so readily and offering his help to do this together. Both of them grounded me so muchhh. The constant encouragement, love, and reassurance meant more to me than they know!🥰🥰🥰

And of course, thank YOU guys as well. For coming over, for the support, and even helping me wash dishes when I thought I could manage alone. Which I clearly could not… and will never attempt to host ALONE again. 😂❤️

I will be taking a break from dine-ins in February to focus fully on CNY orders.
