One of the dishes Chef Damian remembers most fondly from his grandfather's table, Cowdang is a celebration of Kristang heritage. Prawns are gently cooked in a rich, spice-laden coconut gravy, creating a dish that is both comforting and deeply evocative. Though its name may be a misnomer, its history is rooted in the traditions of Singapore's coastal Kristang communities. A tribute to family, memory and home.

Before a single dish is served, every guest is welcomed by one of Gilmore's most striking centrepieces, a suspended light sculpture by renowned paper artist Peter Gentenaar.

Conceived not merely as a light fixture, but as a symbolic vessel, the installation reflects the spirit of Gilmore itself: a keeper of stories, memories, and heritage passed from one generation to the next.

This well-worn recipe book belonged to grandad Gilmore D'Silva. Its pages may be fragile, weathered by time and beginning to come apart, but every handwritten note tells a story.
