At the top of the hill, above the stretch of headlights and half-finished nights, the Dough Room keeps its own hours.

Down below, dinners run long. Plates are cleared. Someone suggests another drink. Someone else checks the time and hesitates. That’s usually when the hill calls.

The walk up is short, just enough to feel like you’ve left something behind. By the time you reach the top, the noise has softened. Inside, it’s flour dusted into the grain of the tables. Metal counters cool to the touch. The machine turns, steady and unbothered, folding cream into itself before releasing it in a clean spiral. Just soft serve done properly.
