One thing I enjoyed here wasn’t just the food — it was how much care went into every dish.
Tried quite a few dishes at Kozen Sushi Bar & Restaurant and honestly, the presentation already made me excited before eating. Very vibrant, very thoughtful.
The Seasonal Chawanmushi surprised me the most. The crabmeat chawanmushi was super refreshing yet rich at the same time. The mini octopus version was smooth, clean tasting.
Their Don Nabe Gohan with Seasonal Fish is very interesting.
The butter covered the truffle rice and thereafter melt into it, that's actually the 2nd way to try the dish, the first way is eating without the butter and the 3rd way is after the soup was added… wah, the butter + truffle + soup combo became damn shiok. Just purely the soup has rich fish fragrance. The fish is much enhanced in taste when it's eaten together with the whole dish for the full flavour balance.
The staff also shared with me how in the history before “omakase” became popular, emperors and elites in Japan experienced dining through traditional styles like kaiseki — focused on seasonality, balance, and presentation.
Feels like this place is trying to bring that same thoughtful experience to everyday people in their own way. Can really see the care in both the taste and plating here. Highly recommended if you love not only to dine but experience the palate with visual and taste.
I was so excited to share my thoughts of the seasonal chawanmushi and the “celebrity dish of the day: Don Nabe Gohan” — those were the real highlights for me that I just had to share them. There were actually quite a few other dishes worth mentioning, but I’ll keep it short here.
Overall, everything was really enjoyable, but the two I mentioned above definitely stood out the most.
