Meet Moe — our head chef, straight outta Rome.
Ten years there, taught him one thing:
good food takes time.

A focaccia? Never rushed.
It needs 72 hours to rest, rise, and get that perfect mix of crispy and airy.
“You can taste the time,” a classic line he says when everyone is wondering why it needs 72 hours.

His ride or die pasta shape: spaghetti
Unbeatable.

His favorite on the Gabagool menu is the Polpette Al Sugo: juicy meatballs in rich tomato sauce- Roman Style 🍝

What the hell is Gabagool?

A word made famous by the cult series The Sopranos, where we follow New Jersey’s own mob boss, Tony Soprano. In the show, Gabagool is the go to name for the Southern Italian cold cut- capicola, also known as coppa or Gabagool according to Tony Soprano.

Gabagool is a classic one- made from pork neck and shoulder, tender & dry cured to perfection.
