I taste coffee in colours.

Since 2017, we have more formally incorporated the multisensory perception of flavour into how we communicate about coffee, particularly through vision and touch.

For a long time, colour has been part of how we describe the taste profiles of our coffees, both in the café and online. For me, colour is not simply decoration. It is another way of communicating what a coffee might be perceived as and taste like.

We have also explored how other sensory elements can influence our experience of coffee. We have made cups in different weights, colours and shapes, choosing forms that we believe can strengthen the fruity, bright flavours we often look for in both filter coffee and espresso.
This way of thinking has also been shaped by our work with dr. Fabiana Carvalho and her research into multisensory perception. Her research helped us understand more about how what we see, touch and feel can influence how we experience flavour. We worked with Fabiana while helping Matt Winton compete for Drop Coffee at the World Barista Championship in 2018, and I have also explored how groups of roasters perceive our coffees in relation to different colours, with her help, at CRG Roasters camp.

Over the years, this has become an increasingly natural part of how we think about coffee at Drop.

Coffee is not experienced through taste alone. The way a coffee looks, the cup we drink it from, the weight in our hand, and even the colours around us can all become part of the experience.

This is one of the reasons colour has become such an important part of the Drop Coffee identity, and why it felt natural for colour to play such a big role in the new packaging.

Earlier this week we revived the new harvest from Hunkute and we went straight in to roasting it and are ready to release.

It is a job for us every year to find the quality we are looking for from the cooperative, but really looking back over the 14 years of the landed coffee at the roastery, from the rural Dalle area of Sidamo, we are amazed by how little the taste profile is shifting.

This is also the last coffee we are releasing before updating our packaging. Also that 14 years in.

The fresh crop Limoncillo from Yasica Norte in the Matagalpa region, Nicaragua, has landed our roastery and been released. Over the past seven years, Limoncillo Washed Caturra has become one of the staple comfortable coffees in the Drop Coffee catalogue. It is a reliably steady, comfortable and delicious coffee.

We have worked with this coffee for many harvestes now and this year we find that the coffee is even more berry driven. This washed Caturra from Limoncillo makes a sweet and steady cup with a medium mouthfeel. Strong notes of toffee, a hint of red apple, and a lingering finish of cacao nibs.

Limoncillo is one of the prettiest farms we have visited, with no fewer than nine waterfalls on the farm.

The shelves at the café are filled up with all the coffees we currently have at the roastery. We are working after season and still waiting for Ethiopia for a couple more weeks. Two weeks in since the roasting of Mugaya AA has started, and it is delivering so crisp, and the Java from Las Declicias is the most open and complex harvest from that beautiful farm so far.

We are opening Drop Coffee Tokyo.

This is going to be so much fun. We’re opening a Drop Coffee in Tokyo. Saying it again makes it feel even more real.

For quite some time now, we’ve been working on bringing Drop Coffee to Tokyo. Our ambition is simple: to share the way we think about coffee, from sourcing and roasting to brewing and serving, and to create the same experience we’ve built in Stockholm.

This is just a small update on what we’ve been working on. We’ll share much more along the way, so stay tuned.

We are excited to have coffee from Kenya back in, and Mugaya with is crisp and tropical stone fruits will certainly will set the bar high for the year. We roasted have roasted, set the flavour profile and released it. The yellow tropical stone fruit like Mugaya is now available online, and at the café on Friday.

This is a vibrant and crisp cup with an aroma of caramel. The flavour notes are dominated by tropical stone fruit, yellow raisin and a long-lasting cooling finish of rhubarb. The mouthfeel is light yet coating.

Summer didn’t wait for you to arrive, but we certainly missed you. We are waiting for Tekangu AA and Kamwangi AA and PB to arrive our roastery soon too.

Coffee release Friday!

There are many experiments in processing speciality coffee at the moment. This coffee is lactic processed, which is interesting on its own. But there is another experiment, underneath this, that excites us even more: how the coffee has been removed from the branch of the coffee plant and harvested without breaking the coffee cherries’ structure. Instead of picking the coffee by hand, this method involves cutting them off the branch, cherry by cherry, using scissors. We are not saying this is the direction to go; it is purely an experiment on how to increase the highest level of coffee even more.
With all humbleness for the cost to produce a coffee harvested in the way, we are beyond excited to see how this gentleness improves the coffee quality.

This coffee has a floral aroma. It is a complex yet delicate taste profile. Flavour notes of jasmine, cacao nibs and bubble tea with a refreshingly bright acidity of white wine. The coffee has a long-lasting citric aftertaste. The body is light and the finish tart.

This is a tiny lot we are releasing at the café (available from mid-next week) and online only. First come, first served.
