From preparing the food behind the scenes to bringing some of your favourite dishes to life, these two are an important part of what makes Mamak Shop happen.

Chung takes care of the satay while Mai works her magic at the wok with our Char Kway Teow — and together, they do so much more behind the scenes.

Merdeka är en tid att fira var vi kommer ifrån, minnena vi bär med oss och maten och traditionerna som för oss samman.
För malaysierna på Mamak Shop betyder hemma olika saker — men vi är glada att få ta med oss en liten smak av Malaysia till Malmö.

Tea time at ammachi's house (mormor) meant teh tarik, jemput jemput, South indian snacks like vadai, kueh… whatever she had decided to make that day. She always made something.

Jemput means to invite in Malay. The name says it all: these are the snacks that appear when someone is coming over. Little fritters, fried fresh, eaten warm while the tea is still hot. You don't plan them. You make them because people are on their way.

There is a specific sound to ammachi's kitchen in the afternoon. Oil heating in the pan. The batter hitting it. The kettle. That is what jemput jemput is to us, not a recipe but a memory of being looked after.

Det börjar med rempah: kryddpastan som bär upp nästan varje maritim sydostasiatisk rätt. Byggd för hand, störd långsamt, med den tid den behöver.

Sen kommer brasningen, som inte går att skynda. Och till sist, reduktionen... där kokosmjölken bryts ner, och kerisiken gör sitt jobb. Kerisik är färsk kokos som rostats mörkbrun och stöts till en pasta för hand. Det är det som ger rendang dess nötiga, djupa tyngd, det som får såsen att fastna på varje tråd kött istället för att ligga löst runt det. Den går inte att skynda, och den går inte att fejka.

Rendang vandrade från minangkabau-köken i västra Sumatra till Malaysia och Singapore, och den hör hemma vid varje bord där något ska firas: bröllop, Hari Raya (Eid Mubarak), en hemkomst. Suresh byggde den här i Malmö, med smakerna han växte upp med. Svep för att se vad som ingår.

It starts with the rempah: the spice paste that anchors nearly every maritime Southeast Asian dish. Built by hand, pounded slowly, given the time it needs to come together.

Then comes the braise, which cannot be rushed. And finally, the reduction... where the coconut milk breaks down, and the kerisik does its work. Kerisik is fresh coconut toasted deep brown and pounded to a paste by hand. It is what gives rendang its nutty, heavy depth, the thing that makes the sauce cling to every strand of meat instead of sitting loose around it. It can't be rushed, and it can't be faked.

Rendang travelled from the Minangkabau kitchens of West Sumatra into Malaysia and Singapore, and it belongs at any table where something is being celebrated: weddings, Hari Raya (Eid Mubarak), a homecoming. Suresh built this one in Malmö from the taste he grew up with. Swipe to see what goes into it.

The last step. A scoop of rendang, fresh coriander on top, and it's done.

No family recipe to follow, just the taste of Singapore Suresh carries in his head, built entirely from scratch.

The kerisik is where most people take a shortcut. In Singapore you can buy it ready-made. Here, we toast and pound the coconut ourselves. That one step is most of the flavour.

Suresh has National Day memories that are older and without easy-to-find photos.

Performing in the parade as a schoolboy in the early 90s. Then, years later, standing on duty as a police officer, during his National Service, watching the same celebration from behind the barrier.

Different years. Different sides of the crowd. Same Singapore.

Suresh learned by being there: standing beside his ammachi (mormor) in her kitchen, watching how she moved, how she seasoned, when she knew something was ready without looking at the clock.

At Shah Alam Restaurant in Boat Quay, she ran a kitchen with 25 varieties of dishes on the board every single day. That standard, that refusal to cut corners, is what we carry to every plate we serve in Malmö.
