🍜 Is there really such a thing as “authentic” ramen?
After spending a month in Japan, we realized something that changed the way we see Japanese cuisine.
We travelled through different cities and prefectures, tasting not only ramen but also many other regional dishes. Almost everything we tried was unique. The broths, noodles, seasonings, ingredients, and techniques all varied depending on where we were and who was preparing the food.
It made us realize that there may not be one single ramen that is the only “real” ramen.
Ramen is a craft in which every region, every city, and every restaurant tells its own story through a bowl.
Over the coming months, we will share the dishes we experienced across Japan, what we learned, and how the journey inspired us.
Our goal is not to copy someone else's recipes.
Our goal is to understand the craftsmanship on a deeper level and, with respect for Japanese food culture, create our own interpretation.
This is only the beginning of our journey. 🇯🇵🍜
