🌱 Craving something sweet for breakfast? Try out these easy Vegan Waffles! 🧇

Ingredients:
• 1 1/2 cups unsweetened nut milk
• 2 teaspoons apple cider vinegar
• 2 cups all-purpose flour
• 1 tablespoon baking powder
• 1/2 teaspoon sea salt
• 1 cup brown sugar
• 1/4 cup melted coconut oil or sunflower oil
• 1 tablespoon vanilla extract
• Vegan margarine (I use the ONA margarine, from STC Hypermarket)

Instructions:
1. Mix the nut milk, vanilla extract and the apple cider vinegar together in a small bowl. Set aside for about 5 minutes - this will make vegan buttermilk.
2. In a large bowl, sift the flour, baking powder and salt.
3. Add the sugar, oil, buttermilk mixture into the dry ingredients and using a whisk, gently mix the batter until just combined. It's okay to have some lumps.
4. Turn on and preheat your waffle maker (I use the highest setting). Grease it using the vegan margarine.
5. Using a soup ladle, scoop out some batter and pour into the middle of the waffle maker. (I fill the ladle up until about half-full, otherwise the waffle becomes too large and sticks inside the machine).
6. ⁠Close and let cook until the waffle is golden brown. Don't open it too early, otherwise the batter will separate inside the machine! I usually wait about 3 minutes before checking.
7. Place the cooked waffles separately on a baking sheet (piling warm waffles on top of one another will make them soggy).
8. Serve with your favourite toppings! I enjoy them with the vegan Hazelnut Cacao Spread from Spar (a vegan alternative to Nutella).

🍽️ Homemade lentil tofu, paired with brown rice, salad, curry sauce and boiled lentils (for extra protein!) 🍛

I used this recipe by NikkiVegan (https://nikkivegan.com/red-lentil-tofu/) and marinated the tofu for 20 minutes using the following ingredients:

• 2 tbsp corn flour
• 1 tbsp sesame oil
• 2 tbsp olive oil
• 2 tbsp soya sauce
• Half tbsp paprika
• Half tbsp peri-peri (optional, for some heat)
• Salt to taste
• Pepper to taste
• Dried mixed herbs to taste

Fry in the airfryer for 20-30 minutes until crispy. Let cool completely before eating if you’d like a chewy texture. The inside is creamy before it cools.

Making the tofu can seem quite tedious but it offers a nice change in flavour and texture. Worth trying at least once and of course you can alter the marinade as you please 🤗

🌰 Hummus and Veggies 🥕🥒

Hummus is a dip made from chickpeas, tahini, lemon juice and spices, commonly eaten in the Middle East. Pair it with some veggie sticks or your favourite baked crisps and you’ve got a (relatively) healthy, protein-rich snack! I highly recommend trying it with carrot sticks for a lovely combination of sweet and savoury flavours. 🥕

Tahini is a paste made of sesame seeds, and is an essential ingredient in hummus. I bought mine from ISPC Boie de Rose. 🙂

I used the following recipe from https://cookieandkate.com:

Ingredients:
• 1 can chickpeas, rinsed and drained
• ½ teaspoon baking soda
• ¼ cup lemon juice (I used bottled but fresh lemon juice is highly recommended)
• 1 medium-to-large clove of garlic, roughly chopped
• ½ teaspoon salt, to taste
• ½ cup tahini
• 2 to 4 tablespoons water, more if needed
• ½ teaspoon ground cumin
• 1 tablespoon extra-virgin olive oil
• Garnishes of your choice (I used olives, olive oil, paprika powder and parsley)

Instructions:
1. Boil the chickpeas for 15 minutes with the baking soda - this helps to separate the chickpea skins.
2. Once cooked, drain the boiled water and fill the pot back up with cool water. The chickpea skins should float up to the surface. Pick these out and discard. Some of the chickpeas may still have their skins attached, simply pinch these off using your fingers and discard.
3. In a food processor or high-powered blender, combine the lemon juice, garlic and salt. Process until the garlic is very finely chopped.
4. Add the tahini to the food processor and blend until the mixture is thick and creamy.
5. While running the food processor, drizzle in 2 tablespoons of water. Blend until smooth.
6. Add the cumin and cooked chickpeas to the food processor. While blending, drizzle in the olive oil. Blend until smooth. Add more water by the tablespoon if necessary.
7. Taste and adjust as necessary - more salt for extra flavor or more lemon juice for extra zing.
8. Garnish with olives, olive oil, paprika and parsley.

🍎 Vegan Apple Crumble 🥧

A family-favourite and surprisingly easy to make! 👩🏼‍🍳

Apple filling ingredients:
• 6 cored and diced apples
• 1/2 cup brown sugar
• 1 tablespoon lime juice
• 2 tablespoons all purpose flour
• 1/2 teaspoon cinnamon powder
• 1/4 teaspoon salt
• 1/4 cup almond milk

Crumble topping ingredients:
• 1 cup all purpose flour
• 3/4 cup brown sugar
• 1/2 teaspoon cinnamon powder
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 1 teaspoon vanilla essence
• 1/2 cup refined coconut oil, melted

Directions:
1. In a pot, combine the apples, brown sugar, lime juice, flour, cinnamon and salt for the apple filling. Stir well until the apples are coated.
2. Cook the mixture on low-medium heat until the apples are soft (takes around 15 minutes)
3. As the mixture begins the dry out, reduce the heat to low and add the almond milk a little at a time, until your preferred consistency.
4. Transfer the apple mixture to a Pyrex dish to cool.
5. In a mixing bowl, whisk together the flour, brown sugar, cinnamon, baking powder and salt.
6. Add the melted coconut oil and vanilla essence, and stir until well combined.
7. Use your hands to crumble the mixture - it should have the texture of course sand and should crumble / fall apart when squeezed gently. Add a little more flour at a time and combine with your hands until this texture is achieved.
8. Spread the crumble mixture out in a thin layer on a silicon baking mat. Bake at 180°C until golden brown. It will likely take you 2-3 batches / layers to bake the entire crumble mixture, depending on the size of your baking mat.
9. Sprinkle the baked crumble onto the apple mixture. Use the back of a spoon to flatten the crumble into a uniform layer.
10. Serve (ideally with some vegan ice cream 🍨) and enjoy!

If you enjoy (or used to enjoy) Milo, this is a great vegan alternative. It’s really thick and tasty! 🍫🥛

Tip: I’m not the biggest fan of soy milk so I add a little almond milk to neutralise the flavour, it turns out perfect. 😊
