I believe that what I see in a curve is just a shadow, like the man in the cave. What I believe is happening inside is not the whole truth, just a reading of temperature around the probes. I would never follow the visual rate of rise (which can be named more accurately “average rate of change” because is not a straight line). I’ll just check the number as like an speedometer. I picture every coffee as a different road and I would drive in different ways.

The wet process (also called "washed") requires the use of specialized equipment and significant amounts of water. Done correctly, the inner qualities of coffee beans are better preserved in this form of treatment and lead to a more homogeneous green coffee, which produces less defective beans.

How long does coffee take to dry?
Drying coffee solely by patio takes 6-7 days for washed coffees, 8-9 days for pulped naturals (semi-washed), and 12-14 days for natural (dry-processed) coffees. This is why coffee beans are typically dried on a patio until they reach a moisture content of 15% and are then transferred to mechanical dryers.

Natural drying remains the best method in terms of quality and taste. The aim is to achieve uniform drying of the crop. Even the direction of movement of workers when turning the coffee makes a great difference. If the coffee is turned in the direction of the sun's rays, the coffee does not develop a shaded side and dries more evenly and quickly.
