Souldough people

For me, the journey with Souldough has always been a journey of personal growth.
Maybe that’s why it feels so rewarding to see it happening to others too.
Watching people unfold their potential… there’s something special in that.
João is definitely someone who went through a big transformation since the first time I met him.
With him, the story feels like it was written in chapters—like a fantasy book.
In the beginning, the hero starts to sense he has some kind of power, but he’s not ready to master it yet.
So he sets off on a journey to find himself.
Brazil, Argentina… the world is big, and it’s easy to get a little lost along the way.
But the hero doesn’t give up—he keeps searching for his own path.
Eventually, that path takes him to Amsterdam, where he becomes a great pizzaiolo.
And then, like in every good story, he comes back,
not the same person who left, but a grown human being.

He’s a football coach too.
And somehow, that makes perfect sense.
He’s just doing what comes naturally to him—
walking younger people through their own adventure,
helping them find their way…
becoming who they’re meant to be.

Para mim, a jornada com a Souldough sempre foi uma jornada de crescimento pessoal.
Talvez por isso seja tão gratificante ver isso acontecer também com outras pessoas.
Ver as pessoas a desenvolverem o seu potencial… há algo de especial nisso.
O João é, sem dúvida, alguém que passou por uma grande transformação desde a primeira vez que o conheci.
Com ele, a história parece ter sido escrita em capítulos—como num livro de fantasia.
No início, o herói começa a perceber que tem algum tipo de poder, mas ainda não está pronto para o dominar.
Então parte numa jornada para se encontrar.
Brasil, Argentina… o mundo é grande, e às vezes é fácil perdermo-nos um pouco pelo caminho.
Mas o herói não desiste—continua à procura do seu próprio caminho.
Eventualmente, esse caminho leva-o até Amesterdão, onde se torna um grande pizzaiolo.
E depois, como em todas as boas histórias, ele regressa—
não como a mesma pessoa que partiu, mas como um ser humano mais completo.
Agora é também treinador de futebol.
E, de alguma forma, isso faz todo o sentido.

Souldough is going on the road this summer.
We tested it last year. It was fun.

Last year Padma Das invited us, but we weren’t ready yet.
This year we made some adjustments, got back in touch—

We come to Jaipur once a year, when possible, for a few weeks.

Dorin .jewelry , my partner searches for gemstones for her jewelry, and I’ve slowly been pulled into the game. It’s a curious ritual.

You walk into a small office, sit down, and ask for something very specific. They bring a little box. Inside are stones that are… close, but not quite. They know it, and you know it.

Another box appears.

Now we’re getting warmer.

“Come back tomorrow,” they say.

And so the dance continues — from dealer to dealer, from tray to tray, from one small shiny possibility to the next. Sometimes for days.

Until one moment a stone appears that simply feels right.

Not the biggest.
Not the most perfect.

Just the one.

In the end you realise something:
you’re not really finding the gemstones.

Sometimes, they’re the ones that find you.

Souldough people

If Souldough has a memory, she’s part of it.

Someone once called her "tia"
maybe because she has the wisdom
to know when to step in,
and when to let you figure it out yourself.

Longest here. Most patient.

Souldough had its ups and downs.
In the lowest moments, she stayed steady.
I would have walked away
at least a couple of times.
She kept going.

Some places survive because of ideas.
Some survive because of people like her.
If you like Souldough pizza,
you might want to thank Cata.

Se a Souldough tivesse memória, ela faria parte dela.
Alguém uma vez a chamou de tia —
talvez porque tem a sabedoria
de saber quando intervir
e quando deixar que você descubra sozinho.

A que está aqui há mais tempo. A mais paciente.

This pizza is called La Dolce Vita. It’s one of our best sellers.
I sometimes wonder if it’s just the combination of ingredients —or if it’s the name.
The way it brings back a memory.
A moment when life felt sweet.

For me, it’s summer evenings when I was about sixteen.
Old enough to stay out late with friends.
Not old enough to carry real responsibilities.
And it was summer — it felt like living inside a bubble.

Every night we met at the neighborhood park, all of us on our scooters.
Some of us had mobile phones, but they weren’t relevant — and we had no money to top them up anyway.
We stayed out until 2 or 3 in the morning, sitting on benches, on sidewalks, on our scooters, talking for hours.
There were no real worries.
Tomorrow was simply another chance to meet again and lose ourselves in those simple, beautiful moments.

Sometimes I think maybe I should rename this pizza Nostalgia.

And sometimes I wonder if I should just wonder less. 😁

Souldough people.

From time to time, I’ll introduce someone who is connected to Souldough in one way or another, more or less directly.
Today, I’d like to introduce you to Jas. Many of you probably already know him — one of the founders of Souldough — but not everyone may know that he became a father just over a week ago.
Jas is also my brother. With only one year between us, we grew up together not just as brothers, but as friends.
We spent hours and hours playing with Lego in our childhood bedroom, playing football in the garden with whichever friends happened to stop by, and endlessly challenging each other on the PlayStation.
And somehow, we never really stopped playing together, even as we grew a little older.
From the stage of a psychedelic music festival to the waves of the Atlantic Ocean, the spirit is still the same — that of two kids who love playing.
Souldough was born as a game. And like many games, there were moments when we forgot to play — especially when bills and compromises started pressing down on our shoulders. But that light, that spirit of play, is still there; it belongs to us. And I believe, and hope, that the little ones who’ve entered our lives are here to remind us how to protect it — and let it shine.

Pessoas da Souldough
De vez em quando, vou apresentar alguém que está conectado à Souldough de uma forma ou de outra, mais ou menos diretamente.
Hoje, gostaria de apresentar o Jas. Muitos de vocês provavelmente já o conhecem — um dos fundadores da Souldough — mas nem todos sabem que ele se tornou pai há pouco mais de uma semana.
O Jas também é meu irmão. Com apenas um ano de diferença entre nós, crescemos juntos não apenas como irmãos, mas como amigos.
Passamos horas e horas brincando com Lego no nosso quarto de infância, jogando futebol no jardim com os amigos que apareciam e nos desafiando infinitamente no PlayStation.
E, de algum modo, nunca deixamos realmente de brincar juntos, mesmo quando crescemos um pouco mais.
Do palco de um festival de música psicodélica às ondas do Oceano Atlântico, o espírito continua o mesmo — o de dois garotos que adoram brincar.
A Souldough nasceu como um jogo. E, como em muitos jogos, houve momentos

Conversation around the table.

January is almost over, which feels like the right moment to check on our resolutions.
Are any of yours still standing on their own legs?

I usually don’t make resolutions. But this year I wrote down a few things where I wanted to slightly adjust the trajectory.

First: less screen time.
Completely failed.
Becoming the narrator of this account was not the best decision from this point of view.

Second: less politics.
Surprisingly successful.
I’ve almost completely eliminated channels and podcasts talking about it. I couldn’t handle it anymore — I needed a break.

Souldough side story: the promised land

Along the road, we’ve often found ourselves at crossroads.
Real ones. The kind that make you slow down, look around, and ask what really matters.
Especially in the early days of Souldough, opportunities to grow were always knocking. More restaurants. More cities. More of everything.
Sometimes we said yes—carried by enthusiasm, ambition, or simple necessity. Other times, we resisted the pull and chose to stay put.
Then, a few years ago, we made our most radical choice yet: we bought a piece of land in the Portuguese countryside, far from the obvious paths.
That decision came from a quiet but honest reflection about who we are—or maybe even more clearly, who we are not. (I say we because this is a thought I was sharing with my brother just last night.)
We’re not businessmen. We’re makers. Artisans. People who like to get our hands dirty, to build things slowly, to stay close to what we create. We care about real projects, real processes, and real connections with the people who move around them.
This is a long-term project, and we’re taking it one step at a time. We imagine it as the natural evolution of Souldough: a place to grow, to learn new skills, to experiment, and to bring people together.
And for me, personally, it’s also a place to rediscover joy.
Over the past few years, necessity pushed me into managing the pizzerias from a distance—efficient(?), perhaps, but not exactly fun. This land is a way back to what I love most: doing, creating, and enjoying the process again.
