Dish 10/10 – Desertification: the final chapter of our menu honours the resilience of our estate. Born from Alentejo’s aridity and scarce water, it reflects holistic soil care and the land’s slow recovery. Shaped like the Herdade no Tempo itself, it traces its contours in dulce de leche, cocoa, and roasted cashew ice cream with a touch of salt.
