This upside down fruit cake is so simple for everyone to try to make it and summer is full of beautiful seasonal fruits, I've chosen plums this time.... It is so simple not to share it
Doesn't require any baking equipments just bowl and wire whisk
4 eggs
200 gr caster sugar
100ml vegetable oil
200 gr plain flour
1 tsp baking powder
1/2 tsp baking soda
and
fruit of your choice
I used 25cm diameter baking dish, butter it and lay bottom with baking paper....lay fruit at the bottom of baking dish
In bowl whisk eggs and sugar for few mnts
add oil and whisk for another minute or so
add sifted flour with baking powder and baking soda
whisk all together till it's nicely incorporated
at this point you can zest of 1 lemon and 1/2 tsp of vanilla extract in to your cake mix but it's optional
Pour your cake batter over fruit and bake in preheat over on 180°C for 35-40 mnts
Perfectly serve with bit of whipped cream to go with your perfect cup of tea or coffee
