This is Ensui Uni (塩水雲丹): Hokkaido sea urchin presented in saltwater rather than the familiar wooden tray.

Delicate, intensely oceanic, and remarkably pure in presentation.

Toyosu is currently the only venue in Puerto Rico offering Ensui Uni, alongside the Hokkaido uni our guests already know.
