Long time no see…
As most of you knew about the project I was about to start in Gdańsk. It is not gonna happen ✌️
Concept, recruitment, vision, and management approach I had taken did not fit the time and the place.
My passion has led me to make some mistakes and here I am.
I have made the decision not be a chef anymore but continuing my vision in a bit different approach.
Instead, I will dedicate my time and experience to fix the gastronomy industry from the inside out, and change the corrupted system it is in now.
It makes me sick seeing the waste of food.
It makes me sick seeing incompetent cooks.
It makes me sick seeing toxic environment in a kitchen and wide spread hate there, just like a Roman plot!
Make me sick seeing the quality of food and service in Sopot, NOT ALL but most of them are way below the basic standards.
I keep hearing the stories how this beautiful city used to look like before and how now everyone trying to avoid it…
And I can go on and on….
This should change, and whole structure in any restaurant kitchen need to be flat and modernized. The french classic kitchen is OUTDATED. We have amazing technology and new equipments to help be better cooks.
No kitchen titles...

And more colours for God sake!
I still remember when president Adamowicz has lost his live. He was the definition of solidarity and hospitality, defending rights of “immigrants” and standing against hate speech, and I feel I’m obligated to return the favor to this Nobel man for what he started.
Trójmiasto hospitality and food should be the crown of the country.
