INDONESIAN FRIED RICE.
How to make it...
A typical dish and probably the most famous, different in every island, of the archipelago of this Southeast Asian country.
Is a great idea to use the leftovers of steamed rice, vegetables and so on.
The most important factor that you'll need to get the real essence of this dish is to make sure you are using fresh grated ginger, fresh grated curcuma and fresh garlic ( you can even combine these ingredients and blend them with oil to use it for frying the veggies and the rice afterwards) and of course sweet soy sauce.
We served this dish in Poland and everyone loved it.
Step 1 (clean and steam the rice, let it rest 30 minutes minimum)
Step 2 (blend Kaffir lime leafs, garlic, fresh ginger and fresh curcuma)
Step 3 (chop your favourite veggies, in my opinion cabbage is a must coz it gives an amazing crunchy factor)
Step 4 (fry the veggies with the mixed oil, salt. Add the steamed rice. Salt. And the sweet soy sauce)
Once you stop the fire add a bit of lime or lemon juice.
If you like spicy, then adding chili is what will make this dish perfect.
On the picture We fried the rice with champis, root vegetables and cabbage.
And We served it with rice chips, tempe and rice sate, green salad with the previous mixed oil, lime, agave, roasted seeds and basil (this last one to get close to the flavour of Indonesian KEMANGI leaf)
And as is traditional in Indonesia with a Slice of tomato and cucumber.
I don't write proportions because I would like you to play with your intuition and improve it every time so you will have one day you personal favourite NASI GORENG.
