๏ธโฃ In a bowl, combine the beef, soy sauce, and calamansi or lemon juice. Mix well and marinate for at least 30 minutes.
๏ธโฃ Heat the cooking oil in a pan over medium heat. Sautรฉ the garlic and onion until fragrant and the onion becomes soft.
๏ธโฃ Add the marinated beef. Reserve any remaining marinade. Cook for about 5โ7 minutes, stirring occasionally, until lightly browned.
๏ธโฃ Pour in the reserved marinade, tomato sauce, ketchup, and water. Stir until well combined.
๏ธโฃ Add the brown sugar, bay leaves, and whole peppercorns. Mix well and bring the sauce to a gentle boil.
๏ธโฃ Lower the heat, cover, and simmer for about 45โ60 minutes or until the beef is tender. Add a little more water if needed.
๏ธโฃ Once the beef is tender, remove the lid and simmer for another 5โ10 minutes until the sauce becomes thick, rich, and glossy.
๏ธโฃ Taste and season with salt as needed. Adjust the sweetness or tanginess according to your preference.
๏ธโฃ Turn off the heat and let the Beef Asado rest for a few minutes before serving.
