Pad Thai Rice Noodles

How to make Pad Thai sauce?
Mix these ingredients all together.

Ingredients:
Tamarind powder (sinigang mix), Patis, Soy Sauce, Honey, Lemon Juice, Chili Flakes, Peanut Butter

Instructions:
Boil the pad Thai sauce until thicken.

Add the cooked rice noodles.

Add all remaining ingredients (Togue, Spring onion, cooked ground peanuts, peanut butter, and crunchy garlic Flakes) then mix all together.

Check taste and serve.

Chicken Cordon Blue
Mommy Sheryl's Kusina

Ingredients:
Chicken Breast, Ham, Cheese, Soy Sauce, Crushed Garlic, Salt, Pepper, Egg, flour, breadcrumbs, oil for frying

For the sauce (optional)
1 tbsp butter, 1/2 tsp flour, 1 cup evaporated milk, salt and pepper to taste

Procedures:
1. Prepare the marinating sauce (mix 1/2 cup soy sauce, crushed garlic and add 1/2 cup water). Add the thin slice chicken breast then marinate for 3 hours. Put in the fridge.
2. Remove the marinated chicken and place in plastic wrap and slowly pound to flatten. Season with salt and pepper the both sides of the chicken.
3. Use a foil to carefully roll the cordon Bleu.
4. Wrap the chicken with the ham and cheese then roll. Secure the ends while rolling. Chill the cordon bleu for 30 minutes.
5. Steam the cordon blue (para luto na ung loob bago iprito pero pwd rin nmn hindi na steam, just making sure lang na maluto hanggang loob ung chicken kaya ini steam ko muna). Then set a side let it to cool down.
6. Prepare three plates:
First plate, add the flour.
Second plate, add the egg and season with salt, mix well.
Third plate, add the breadcrumbs.
7. Coat the chicken cordon bleu in flour, eggs and breadcrumbs. Repeat this process for the rest of the cordon bleu.
8. Fry in a preheated oil under low to medium heat for 5-7 minutes each side.
9. Let it rest for 15 minutes before cutting.

For the Sauce:
1. Melt butter in a pan under low heat. Then, add the flour. Stir and cook for 3 to 5 minutes until the flour is cooked.
2. Then, add the evaporated milk small amount at a time while stirring. Make sure that there’s no lumps. Let it boil using low heat until thick and creamy
3. Once the white sauce turns thicker, season with salt and pepper to taste. Mix well and set aside.
4. Serve the chicken cordon bleu with the white sauce. Enjoy!

Ingredients:
Chicken, Lemon grass, Crushed garlic and ginger, Soy sauce, kalamansi, honey / sugar, salt and pepper

Instructions:
1. Mix all ingredients. Marinate the chicken for 3 hours or more.
2. Make atsuete oil, rub oil to chicken skin when almost done cooking.
3. Put marinated chicken to oven and cook until skin slightly burnt.
4. Serve with hot rice.

Seafood with Cajun Sauce πŸ˜‹

Ingredients:
Shrimp, Squid, clam shell, Cajun powder, tomato paste, ground onion, ginger and garlic, honey/sugar, onion leaks, salt and pepper

Instructions:
1. Saute the ground onion, ginger and garlic
2. Add tomato paste, salt and pepper, cook for 5mins.
3. Add honey and Cajun powder then mix.
4. Add boiled seafoods and mix.
5. Add a pinch of salt, if needed.
6. Add chopped onion leaks then turn off the burner.
7. Serve with hot rice. πŸ˜‹
