What is Bloom ?
When chickens are about to lay, the last protective layer which goes onto the egg, is called the BLOOM, which protects the egg for many weeks, so the egg will last longer, maybe even months. Eggs collected from clean laying areas do not need washing as washing eggs takes away the BLOOM. A little brushing off may fix a dirty egg. I wipe over eggs before cooking with them, leaving the BLOOM on the egg for as long as possible.
Most eggs from people's back yards still have the BLOOM as they will not have been washed, however many shop bought commercial eggs have to be washed as a requirement to sell eggs, strange when mother nature has already provided the egg with a protective coat!
