π² Silken Tofu Mapo Tofu Style πΏπ₯
A gentle, smooth-textured mapo tofu made with silken tofu. Slightly spicy and perfect with rice π
Ingredients (Serves 2) π
Silken tofu: 1 block (about 300g) π§
Ground pork: 100g π₯©
Green onion: 1/2 stalk (finely chopped) πΏ
Garlic: 1 clove (minced) π§
Ginger: 1 piece (minced) π«
Seasonings
Doubanjiang (chili bean paste): 1β2 tsp πΆοΈ (adjust to taste)
Tianmianjiang (sweet bean paste) or miso: 1 tbsp π―
Soy sauce: 1 tsp πΆ
Mirin: 1 tbsp π₯
Water: 150ml π§
Potato starch slurry: 2 tsp (potato starch + 2 tsp water)
Sesame oil: 1 tsp πΏ

1. Prepare the tofu
Cut the tofu into 1.5β2 cm cubes, blanch briefly in hot water, and drain well π§
2. Stir-fry the meat and aromatics
Heat sesame oil in a pan, add garlic and ginger, and stir-fry until fragrant π§π«
Add the ground pork and cook until browned π₯©
3. Add the seasonings
Stir in doubanjiang and tianmianjiang, and cook until aromatic πΆοΈ
Add water, soy sauce, and mirin, then bring to a boil π§
4. Simmer with tofu
Gently add the tofu and simmer for 2β3 minutes, stirring carefully β¨
5. Thicken the sauce
Gradually add the potato starch slurry, stirring until the sauce thickens π₯
Finish with a drizzle of sesame oil for extra flavor πΏ
6. Serve
Transfer to a serving dish, and top with chopped green onion or sprinkle of Sichuan pepper if desired πΏπΆοΈ

Silken tofu is delicate, so stir gently to keep the cubes intact β¨
Adjust the spiciness by varying the amount of doubanjiang πΆοΈ
