​This recipe blends the comforting flavors of Korean Jimdakk with the classic soy-vinegar profile of Filipino Adobo. The result is a savory, subtly sweet, and tangy chicken dish with tender vegetables.
​Ingredients
​1 kg chicken pieces (thighs, drumsticks), cut into medium-sized pieces
​2 large potatoes, chopped into chunks
​2 medium carrots, chopped into chunks
​1 medium onion, sliced
​2 spring onions (scallions), cut into 2-inch lengths
​1 red or green chili, sliced (optional)
​100g glass noodles (dangmyeon, optional), soaked in warm water for 20 minutes
​2 cups water or chicken broth
​1 tbsp vegetable oil
​For the Sauce:
​1/2 cup soy sauce
​1/4 cup rice vinegar (or white vinegar)
​1/4 cup brown sugar or oligodang (Korean syrup)
​2 tbsp mirin (rice wine, optional)
​1 tbsp sesame oil
​1 tbsp minced garlic
​1 tsp minced ginger
​1/2 tsp black pepper
