Carbonara

Ingredients:

300g rasher bacon, roughly chopped
250ml cream
1/2 cup water
3 cups sliced button mushrooms
3 eggs, beaten
grated parmesan
4 cloves garlic, minced
1 small white onion, finely chopped
olive oil
freshly ground black pepper
fettuccini or spaghetti noodles

Procedure:

1. Cook pasta less 2 minutes according to packet instructions.
2. In a pan add oil then fry bacon pieces until crispy. Remove everything from the pan including the oil, drain bacon then set aside.
3. Add some bacon oil back to the pan then saute garlic and onions, cook until onions are soft.
4. Add mushrooms and stir fry for two minutes, adding bacon oil if needed.
5. Turn heat on high then add cooked pasta, cream, water and bacon then bring it to a boil.
6. Turn off heat then add beaten eggs, lots of grated parmesan and lots of freshly ground black pepper. Mix well and let the residual heat cook the beaten eggs.
7. Serve immediately and top with grated parmesan cheese.

Chicken Pork Adobo

Ingredients

*Chicken Adobo

1 kilo chicken
200 ml soy sauce
250 ml vinegar
5 pcs payleaf
5 grams peppercorn
100 grams garlic
100 ml water

*Pork Adobo

1 kilo pork
350 ml vinegar
5 pcs payleaf
5 grams peppercorn
100 grams garlic
100 ml water

adobo duo
70 grams chicken adobo
70 grams pork adobo
1 hardboiled egg
100 grams kangkong
1 cup garlic rice

Procedure:

Chicken Adobo
1. Place all ingredients to a pot then braise chicken until tender.
2. Strain and reduce the remaining braising liquid until 1/4 cup
remains.
3. Fry chicken in a pan until brown.
4. Put back chicken in the sauce and set aside.

Pork Adobo
1. Place all ingredients to a pot then braise pork until tender.
2. Strain and set aside.
Fry pork until brown, set aside.

Adobo Duo
1. Arrange rice on the bottom of plate.
2. Place boiled kangkong and egg on top of rice.
3. Arrange the chicken adobo, place pork adobo on top.
4. Drizzle chicken adobo sauce around the plate then serve.

Adidas Humba

Ingredients:

1/2 kilo chicken feet ( cleaned and fried)
1/2 teaspoon black pepper
1 teaspoon atsuete powder
5 cloves garlic
1/2 cup vinegar
2 tablespoons sugar
salt to taste
hard boiled eggs ( optional)
Instructions:

1. Saute the garlic then add the fried adidas, black pepper, vinegar sugar and atsuete powder then stir and simmer for few minutes.
2. Add the water and simmer until the adidas is really tender, add hard boiled egg if you want season it with salt then simmer until done. Serve with rice.
