There is beauty in being earnest, even when others are not. To truly mean what you say. It’s a quality I value deeply, live by, and naturally seek in others.

When Johndel chose the word mapagkalinga (caring), he meant it. It’s at the heart of everything we do at Mrs. Saldo’s—the care that goes into preparing the food, welcoming our guests, and even the pauses in between.

Most of our guests may never meet him, but Johndel carries that spirit in abundance. He’s someone I rely on to keep things running smoothly in the kitchen, always with care and consistency.

He’s also a father, which only adds to the way he leads and looks after those around him. Yesterday was his birthday, and today we celebrate him—and all fathers. Happy Father’s Day!

I was asked once how I can tell if someone has the kitchen “gene,” and it took me a while to answer because I didn’t want to simply say, “you just know.”

For me, it’s someone who pays attention to details. Someone who cares so deeply that the desire to learn, improve, and do things well becomes more important than the task itself. The kind of person who carries this quiet discipline even when no one is looking.

Jhandrex started with us as a server, with no culinary background at all. But somehow, I knew early on that he belonged in the kitchen. Over time, he became one of the people I trust — whether it’s making sure things run properly in Silang, and beyond whenever we do pop - ups and collaborations here and abroad.

Like Bryan and Michael, watching him grow into his role has been one of the unexpected gifts of running a restaurant. The kind that reminds you that skill can always be taught, but care, humility, and heart are much harder to find.

I hope he’s proud of how far he’s come, because all of us certainly are.

For our collaboration dinner with .ph this coming June, I reflect back on my very first trip to India which began in Delhi, followed by Jaipur in Rajasthan.

What stayed with me most were the colours — vivid and almost surreal, like stepping into my childhood memories of Aladdin brought to life. Then came the flavours: tempered spices that demanded your full attention.

These are the moments I carry with me as we take on Western Indian regional cuisine for this dinner. From the desert-proof ingredients and royal traditions of Rajasthan, to the multicultural intersections of Maharashtra, the diverse flavours of Gujarat, and the Portuguese influence woven through coastal Goa — it’s a cuisine so deeply layered that even thinking about taking it on feels both exciting and humbling.

But it is exactly the kind of challenge our team looks forward to.

Marinor started with us as a steward, while Kim first came to Mrs. Saldo’s to help care for the plants around the property — when we started, I was still insisting on climbing ladders myself to water everything until I finally realised I needed help.

What I’m most grateful for is how open they both were to learning and taking on challenges beyond what they first came here to do. Over time, they grew into two women our kitchen leans on — for their attention to detail, steadiness under pressure, and tenacity to keep sharpening their craft. Marinor, especially, has become our quiet queen of order, making sure nothing disappears into the chiller’s version of oblivion.

But beyond their work, they are mothers too.

And maybe that’s also why they carry such a deep sense of care in what they do. There’s a certain attentiveness mothers naturally have — the ability to notice small things before anyone else does, to hold structure together calmly, and to continue showing up even when the work is repetitive, tiring, and unseen.

This Mother’s Day, we celebrate mothers like Marinor and Kim, whose quiet work holds everything together 🙏🏼

Last night, I had a wonderful conversation with a dear friend about how her grandmother in Penang made everything from scratch. Back then, Nonyas rarely kept recipes, but she cooked twice a day, everyday, in hopes of bringing people together through the dishes they loved.

And it made me think about my own approach to cooking. Whenever I’m by the stove rendering a curry paste, braising, or grilling our prawns over charcoal or pan-frying salmon to get the skin to a crisp, it’s really about the energy, time, and attention poured into a dish — in hopes that the person receiving it tastes the care that went into it.

To all the mothers who put care into the things they do for the people they love, in ways we may never fully understand, thank you for all that you do.

We’re finally done kitchen testing The Bang Bang Tasting Menu — inspired by my time living in Bangkok 🇹🇭

I was originally planning a Penang-Noy menu for Mrs. Saldo’s, but during our recent food trip, said: why not start with Bangkok, since that’s where it all began? He was right.

For the song, I went back to my Bangkok playlist that carried me through those days. JLO’s Feelin’ So Good was on repeat on my days off — especially when I was missing home.
