BRAZO DE GRAHAM
napakasarap
Ingredients
Meringue
10 egg whites
1 tspn Cream of tartar
1 cup sugar
2 tbspn Cornstarch

Brazo de Mercedes
Custard filling ingredients
Bake 170c 22-25 mins

10 eggyolks
1 tin condensed milk 360-390grams
1 tspn vanilla
Pinch of salt

Cook in double boiler
Until thick

Graham layer

2 packet graham cracker 210grams each
1 evap may sobra pa yun
2 all purpose cream chilled 250ml each
Condensed milk 390 grams

PROCEDURE

Meringue
✅ Beat egg white into low speed and add the cream of tartar,
Next add the sugar little by little and keep on mixing on low speed to high speed add cornstarch until stiff peaks

You can add food flavouring at your desires i preferred to use EMULCO ube yam flavor .this is optional. But if you want you can use classic only .
Put it on the greased pan with parchment paper ,
Flattens top and use fork for adding design, baked at 170c 22-25 mins
Dust a parchment paper where you will flip it after baking and let it cool

CUSTARD ✅
Using double boiler method mix egg yolks, condensed, vanilla, salt and cook it until you reach the desired consistency of the filling

GRAHAM LAYERS ✅
mix allpurpose cream or whipped cream
with the condensed milk ,add vanilla flavouring .

On a tray, line the graham crackers based on the size of the tray , drizzle with fresh milk or evaporated milk to softens the crackers , then put the cream mixture on the top , repeat the procedure depends on how many layers of graham you want , then put the custard filling,
Then put the baked meringue on top.

RECIPE
Ingredients
500g glutinous rice flour for bilo bilo + 4-5 cups of water
1liter panagalawang gata
1liter water
unang gata
10 pcs saging na saba
500g sweet potato
250g ube / yam
1 1/2cup small sago
1 cup sugar
1 cup sago green (optional )
1 cup sago red ( optional )
4pcs pandan leaves
1 tbsp ube emulco flavouring
Procedure
Sa isang malaking kaserola
paghaluin ang pangalawang gata , tubig at asukal maglagay ng bnuhol na pandan at hayaang kumulo ,
Habang nakasalang na ito simulan na ang pagbilog ng bilo bilo , wag sobrang tigas at wag malata ang pagkakamasa sa bilo bilo para magandang tignan
ihanda na rin amg hniwang saging , kamote at ube ,
kapag kumulo na ang tubig at gata ilagay mauna ang saging , isunod ang maliliit na sago, haluin at isunod ang kamote at ube,isunod ang bilo bilo at patuloy na haluin.
isunod ang unang gata para mas lumapot at Sumarap , isunod ang ating ube emulco na magpapasarap at magpapabango pa ,
iadd ang colorful na sago , optional haluin hanggang tuluyan na maluto ang mga sahog.

UBE CINNAMON ROLLS RECIPE na forever malambot subukan nyo na at tlagang nakakauhgsss sa sarap katulad ko🤣
Ingredients
Dough
500g flour ( 250g bread flour + 250 apf )
2 large eggs
3/4 cup warm milk
1/4 cup butter, melted
1/4 cup sugar
2 tsp active dry yeast
1 tsp salt
1/2 cup ube halaya or ube extract (adjust for desired color and flavor)

Filling
1/2 cup brown sugar
2 tbsp cinnamon powder
1/4 cup butter, softened

Toppings
Condensed Milk or what you
Preffered toppings.

Procedure
To prepare the dough, combine warm milk, sugar, and yeast in a large bowl. Add eggsGradually add the flour, mixing until combined, add the softened butter and the ube halaya using mixer dough hook attachment until elastic ( window pane method ,) if using manual kneading Knead the dough on a floured surface until smooth and elastic, about 10 minutes. Place the dough in a greased bowl, cover, and let it rise until doubled in size, 1-2 hours.

For the filling, mix brown sugar and cinnamon in a small bowl. Roll out the dough into a rectangle. Spread the softened butter evenly over the dough and sprinkle the cinnamon sugar mixture on top.

To assemble the rolls, roll the dough tightly into a log and cut it into 12 equal pieces.
Here I used thread as cutter for a perfect cut dough
Place the rolls in a greased baking dish,
with parchment paper then cover, and let them rise for another 30-45 minutes.

Preheat the oven to 180°C (350°F) and bake the rolls for 20-25 minutes or until golden brown.

Drizzle with condensed milk and serve,
Enjoy your fluffy soft ube

BANANA CHIFFON CAKE
Ingredients
Set A
2 ¼ cup cake flour
½ tsp baking powder
½ tsp baking soda
1 tsp salt
Set B
3 banana over ripe mashed 360g.
8 egg yolks medium size
½ cup oil
¼ cup sugar
Meringue
Set C
8 egg whites
½ tsp cot or cream of tartar (or 1tsp. vinegar or lemon juice)
½ cup sugar
Baking pan 2 pcs 8*3 inches round pan

Divide into half the recipe for 1 pan

In a bowl combine Set A and set aside
Then in a bigger bowl
Add set B and mix until the sugar is dissolved then sift in the dry ingredients(set A)
Combine until no trace of flour
Do not over mix
Set C
In another bowl add eggwhites and cream of tartar then whip using hand mixer or stand mixer using wire whisk attachment then add sugar slowly mix until stiff peaks.
Fold in into the cake mixture,
Then pour into baking pan prefferably with parchment paper at the bottom of the pan only
2 baking pans needed (8*3 inches or 9*3 inches roundpan)
Bake on preheated oven 160c 35-45 mins until done.
when you insert a toothpick it will comes clean
Let it cool completely.

Frosting
500ml whipping cream
1cup sifted icing sugar

Procedure
Pour the cream in the mixing bowl
Add sifted icing sugar
Whip until stiff be careful not to over whipped it will be hard to pipe assemble and frost the cake
Cut the cake into half to make it 4 layer

(Divide the recipe into 2 for half recipe for 1 pan)

Glaze with ready made caramel or dulce de leche

Enjoy!!

MILKY UBE CHEESE ROLL RECIPE
Ingredients
1 kg all purpose flour (soft flour)
1 tbsp salt
1/2 cup white sugar
1 tbsp yeast (instant dry yeast) plus 1/2tsp
Liquid must be 55percent of flour upto 57percent

60 grams evap
60 grams mayonaise or (1 egg)
450 grams luke warm water
1 tablespoon ube flavoring (alternative 2 tsp neco violet flavor ihalo sa liquid ingredients plus 2 tspn vanilla)
100 grams vegetable oil

Coating ratio
1:1
1 cup milk powder
1 cup icing sugar

Filling

Cheese na hiniwa ng pa cubes at hindi mabilis matunaw

Buttercream glaze or pamahid kailangan totally cooldown na ang bread bago pahiran para kumapit yung coarting or almond slices (optional)

1/2 cup margarine
Pinch of salt
1 1/2 cup sifted icing sugar
This is Straight dough method not sponge method

Normally kapag tried and tested na yung yeast

Hinahalo kona yang dry lahat kasama ng flour
No need to mix it with water and buhaying ng 10 to 15 minutes

Ilagay mo lang una yung flour sa bowl..
Tapos salt sa isang gilid,tapos yeast sa kabilang gilid at sugar

Tapos sunod mona yung mga iba pang ingredients..

Sa water pwedeng magtira ka ng 1/4 cup kasi iba iba tayo ng gamit na brand ng flour maaring malakas sa tubig yung flour mo kesa sa flour ko.

1st proofing 1hr to 2 hrs
2nd proofing 40 to 45 mins (depende sa climate)
Baking temp 150c
Baking time 18-20 minutes
Palamigin then saka ipagulong sa icing sugar ane milk gaya nang pagpapagulong sayo ni krass kapag gabi 😅🤭🤭✌️
