Rattan Meringue Tart
This tart has five layers, a coconut shortbread base, soft coconut cream, see-through dayap jelly, rattan curd, and a torched meringue on top.
We didnât know about Rattan fruit until it caught our eye during our market run. It looked like dragon eggs with its scaly skin. Curious, we asked auntie what it was and if we could try one, and so we did and quickly flashed her our mukhasim. We later learned that these are called yantok or littuko, and some people love to eat it with salt, or put it in their sinigang for that extra sour kick. But we had something else in mind. đ
