Sun. Surf. Sand.
And, hopefully, a beautiful sunset.

But then the rains come.

And something else happens.

The mountains wake up. 🌿

The hills turn impossibly green.
The waterfalls swell.
The rivers start running.
The countryside comes alive.

Everything gets a little quieter.
A little cooler.
A little more lush.

So maybe rainy season isn't the time to stay away from La Union.

How to eat Pani Puri.

Step 1: Break the shell. Sometimes things need to be broken to hold something beautiful. Don't throw the broken bits away—they add the crunch. Even what's broken still has a purpose.

Step 2: Fill it with the potatoes. They're the star, but they didn't get there alone. They were shaped by a slow-cooked masala that made them who they are.

Step 3: Add the tamarind chutney, garlic toum, pico de gallo, and mint water. Every flavor has a place. Even the loud ones... just go easy on the garlic. 😄

Step 4: Pop the whole thing into your mouth.

That's when the magic happens.

A community of flavors comes together to create something none of them could become on their own.

It was the conversations between strangers that quietly became community.

The people quietly trying to create a life that feels a little more human.

That's the La Union we know.
