"I have long broken up my relationship with pork. On very few occasions, kapag โyun ang ulam na luto ni Mommy at tinatamad na ako magluto ng iba, Iโd taste a little.
Today, I have decided to open up my heart just a tiny bit to an old flame. โAng sarap naman kasi nitong longganisang ito!โ Hindi ko rin naman masabing โKasalanan mo ito, ChoChris,โ because what I tasted is something to be thankful for, to share with friends and to taste over and over again.
The day prior, ibang longganisa niluto ni Mommy. Ewan ko ba โ- napupuno ng longganisa ang ref namin sa dami ng naglalako sa subdivision page. When I scroll down, it would be: ensaymada, inutak, longganisa, chocolate chip cookies, face mask, dishwashing liquid, cheesecake, longganisa, crispy pata, kimchi, longganisa.
One fine day, just very randomly sapagkat iba ang naging pakay ko, I told ChoChris na mag oorder ako ng longganisa; that I will support the cause! (Iska) Lo and behold may fresh batch nung araw na โyun! Wala nang patumpik tumpik pa, bago lumubog ang araw, order was signed, sealed, delivered!
Excitedly, I fried the longga under low heat, naghiwa ng kamatis na galing sa overflow ng Baguio (Guys, support din natin sila) at nagcompute sa utak ko kung ilan ang kakainin ko sapagkat ire-record ko sa Calorie Count.
Medyo nahirapan akong tanggalin ang longga from the plastic. Aaaah, kasi nga โlean.โ The familiar scent of longga filled the space but oddly enough, parang โmas malinisโ ang aroma nito. In truth, when I kept on smelling it, nainip ako na maluto ito.
Finally!
I art directed the cooked longga on a plate kasi pangako ko kay ChoChris na pipicture-an โyun for documentation.
I started off with one and eagerly sliced a quarter. โYung hiwang malaman na malambot โ- gets? Hindi โyung pag hiniwa mo parang may pinaglalaban siya at ayaw kumalas.
Smelled the piece again and took my first bite. โYung malaman na malambot โ- gets? And then, there goes the flavor! The right combination of sweet and salty, with that promised kick of garlic in juicy, lean meat. Ang winner for me ay โyung crunch ng nag caramelize na โsugarโ all around the longga. That made the experience even more exciting!
I had to fully appreciate it first without anything else, just the longga. On my second piece, saka na lang pumasok ang kamatis and side salad.
If I were to situate myself eating the longga, Iโd say I can be in a really nice hotel eating breakfast by the window seat. Or by the seashore while the beach calls out to me. Or by an al fresco cafe that serves all day breakfast. Or at home, with my family, on a lovely Sunday, Fatherโs Day morning.
Functional and emotional ang effect niya for me: filling and heartwarming at the same time.
If I may add, it doesnโt leave a nasty aftertaste (sapagkat may katotohaban โyung joke na โyung longga na kinain nung agahan ay lasa ko pa rin haggang dinner).
OA ba itong description ko? Hindi naman. If all these flooded in my head nang dahil lang sa longga, then it must really be some longga.
Oh, before I forget โ- this Keto longga is guilt-free, with ingredients that I cannot even pronounce or spell (ok, joke na ito). Basta, may Himala โyan. Ganun.
I am excited to eat again tomorrow. This time though, I will try a longga sandwich. Then maybe, longga pasta.
I will make a recommendation though since I think you will have a market for it: a level 2 on garlic. Isa ako sa captured market nun! Parang anghang level lang, right?
Having said all these, I would like to make an apology: hindi ko napicture-an ang longga.
