Binallay is a traditional delicacy from Ilagan, Isabela, and we turned it into something you've never seen before. Three soft, chewy balls skewered and laid right on top of your drink, finished with a drizzle of sauce.

Isabela meets Japan. Local meets Filo. And it works. ✨

Fun fact: Binallay isn't just food, it carries a lot of meaning. It's a Holy Week tradition in Ilagan, where locals fast and eat nothing but binallay as an act of devotion. It's also considered a symbol of the IlagueΓ±o spirit: hardworking, patient, and deeply rooted in faith, because the process of making it is no joke. The glutinous rice is ground the traditional way using a stone mill, steamed twice, and requires a special technique just to unwrap without wasting a single bit.
